Make a marinade of balsamic vinegar, dark molasses, garlic, and oregano. Marinade portabellos briefly and grill.

Fill with a mixture of goat cheese, sundried tomatoes, capers and rosemary and bake.

I make a vegetable Napoleon that performs well.
Marinate the portabellas, some zuchinni, yellow squash, eggplant, red bell pepper and carrots in a garlic-rich vinaigrette. Roast (or grill) enough to get some color. Slice each vegetable as to give the greatest surface area (i.e. carrots a sliced lengthwise). Assemble the vegetables in layers using the portabella as the base and using goat, neuchfatel or other cheese as 'glue' between the vegetables. Skewer with rosemary for presentation. To add a nice twist on the presentation, slide a bread tube over the assembled napoleon to trim the rough edges and to give a 'cookie cut' look. I generally pour the remainder vinaigrette over and around the napoleon as the sauce.
