Talking intro

Greetings from Portland, Oregon. I'm in the process of changing careers - leaving the clerical/state government and becoming a pastry chef. I begin school in 89 days at Western Culinary Institute in their new LeCordon Bleu Patisserie and Baking program. They also just moved into a new location and everybody loves it.

I have been baking for numerous years but just in this past year I have found more pleasure and passion when I am working on a cheesecake, making chocolate truffles and getting a wedding cake started.

However, with this career change I am having a really hard time trying to find employment in this field. Everybody wants you at fulltime and not a student - any advice?

Well, off to work I go...have a wonderful Thursday and welcome to the Pacific Northwest - God's country!
