Talking Hello from Western Michigan

Googled Electric vs. Gas ovens and found this site, cool! Freshly relocated from Chicago area to the slower pace of West Michigan, and building anew house. Planning the kitchen, with visions of a cooktop in an island with a snack bar across so I can visit with my guests while I prepare dinner. SO...
Jenn-air with downdraft?, convection double wall oven, slide in unit. way too many questions. Hope you all can help.
I am a diehard fisherman, who loves to prepare my own catch and make people say "Wow, this is good , doesn't taste like fish at all" so I can offer some great tips on how to handle a fish from hook to plate.
