Cool Hei kaikki

Big HI from Helsinki/Finland. The one and only Homeland of Santa Claus.
Weather is beastly freezing, 6-35 minus degree of frost. And night is 3 months long.
I’m, oh so, keen on spicy food and of course chilli+chocolate recipes.Thrilling.

I have a friend in Espoo, his sons play hockey for the Junior team Espoo Blues, he was also Goaltending coach for Jokerit. He is now CEO of Divace-Oy.
I do hope to get there in the future for a visit.

We enjoy making new friends as well.

A couple of years ago I was researching Christmas food traditions in Finland.
I really enjoyed it and felt like I was missing something by not being there.

Hey oh

I have to restrain myself in saying 'Oh goody FINS!!', because it has just occured to me that you may be able to help me out, and after thunking myself in the head, I popped right on up here to set to you a question thats bothered me for more than ten years!

I wish I could remember a Finnish dish that was a favourite of mine when I lived in Thunder Bay. At the retaurant, The Hoito (Finnish greating and community center that has existed since Finnish farmers first came to Canada), they served really simple dishes, for cheep! Always good food, but the menu was in Finnish, and you kinda learned what was what just by ordering. This dish was a scalloped potatoe with creamed herring. Simple like I said, but boy was that good.

Any ideas what this was, and then, seeing as how this is a cooking forum, ah, maybe we will discuss the finer points in a forum down the list??

KOTG,
I'm not trying to hijack anything from Hele, but you might be thinking of

Sillilaatikko (Herring Casserole)

1 lb (4cups) thinly sliced potatoes
10 pieces of herring (available preserved in jars)
1 onion, chopped
¼ tsp white pepper
1 egg
2 c. milk
1 Tbsp flour
Layer on to a well-greased casserole dish:
potatoes
herring
chopped onion
Finish off with a layer of potatoes.

Mix egg, milk, pepper and flour. Pour on top of potatoes. Bake in moderate oven (375º F) for about two hours, until well done.
