Default I'd like to reintroduce myself....

I used to poke around here a couple of years ago, and had the good luck to learn from some of the wonderful and knowledgeable folks on this site. I recognize some of the names from that time. Some of you lent me your gunbo-making expertise. Thanks for that! At the time I was managing a place in Maine, but I have recently opened my own personal chef and catering business. Personal chef is rather a stretch as I no longer go to people's homes to cook, but have them pick up their meals in the shop. I cater small parties. I am enjoying myself, but am finding that there's too much work for just me and an occasional part timer or 2 or 3 for larger parties, but not enough money to hire someone fulltime. Hopefully by summer, I'll have figured it all out.

I'm happy to have rediscovered Cheftalk and hope to learn even more from you all.

Hi Mezzaluna! If I remember right, you were very helpful when I asked for advice about a miserable, power-hungry, insufferable, SOB who was hired where I worked. (I'm over it, really.... ) I did quit after a fair notice- too fair, really, since I stayed for a month until they found a replacement. Naturally, they didn't tell me they had found someone until I was called at home the night before I was to go back after a day off. I know I did the right thing by not leaving them hanging, but would have appreciated the same consideration instead of a 12 hour notice that my services would no longer be needed. I AM over it, though.

I make it a point to call the owner once in awhile or stop in if I'm in the area, since I've known him since I was a teenager. I have even borrowed ice from him when I've had catering jobs in his area. I guess I'm just too stubborn to let the other guy think I was hurt by the whole power grab. It all came out in the wash anyway. I have my own business and if I work hard for the next year or so, I may make what I was making when I worked there.
