works for me - Bonjour Ya'll Hi,
I have been reading here for a while and am starting to post, so here goes. FIU grad via FSU (long story involving 6 years and partying, go Noles!). I started in the biz at 8, standing on a milk crate making salads, moved up to the dish room, then prep, then the line. Pretty traditonal old school. Finished College and started working for Dennis Max in the 80's, got very involved in the South Florida fine dining scene (worked with Minatello, etc.). Moved to Melbourne Beach (chef at the SBI), then opened my own place, got four Forks, did that for 3 years. Lost the place in a Huricane, took my Money and my new wife to The big easy (always a dream of mine). Worked around there a bit, got devorced and got an interview in Philly area, moved up here. I then worked in fine dining for 2 more years. Found contract food service (great hours and no weekends). Started doing some high end catering and am now persuing that and a new Italian / Creole venture.

I am looking forward to reading and posting here, looking to get back in the rest. swing of things (long hours, no weekends or holidays off) wohooo!
