Wasted !!Moshi Moshi from Singapore!!

Hi guys,

I hail from Singapore. Im 26 this year and I have been cooking for 3 years. My experiences are rather short and consist of working as Chefs in 2 Post Modern cafes and restaurants for 2 years.

My teacher or shall I say Shifu (word coined via Chinese language) , was a Executive/Head Chef of 5 Star Renowned Hotels in Singapore for more than 10 years. He has been teaching me since I started out on tis wonderful art and craft called cooking .

I believe I am still a huge amatuer in terms of cooking, and am always looking to improve my skills to another level. I want to reach a stage so called 'Perfection' tho it might never exist.

Previously I was a lecturer before being a chef.

Welcome to Cheftalk.

Do you use much hot peppers in your cooking?

What kind do you use? I imagine the small Thai peppers? Any other varieties?

there r two main kinds of peppers.. white n black.. traditionally i opt for the less spicer in taste; the black..

McCormick brand is my fav..

Hey, yea, my profile pretty much says it all, although my blog would tell you alot more. (link below)
I'm not a chef by profession. Technically, still a student at the Polytechnic.
But I do hope to do my culinary studies after National Service!

And you? Where about are you working at?
