Your location makes me think you're preparing a lot of excellent tropical produce and seafood, but being open 24/7 must mean a huge repertoire of dishes. How do you work in al the great local flavors?

Unfortunatly local produce and fresh fish are pretty scarce down here the agriculture and fisheries can't keep up with the demands therefore we have to spend most of our time fighting with customs and government to get food import licences.
