 Welcome to Chef Talk, Dragonfly. You're right: this is the best place to come for the advice you're looking for. I'm sure you'll hang out at the Professional Catering forum! You can use the search feature to look for topics you don't see, because in the seven or so years we've been here, we're sure to have mentioned what you're looking for!
