Default baker

Hello all, my name is Vassili, that's my Greek name anyway; you can call me William if it's easier for you to remember. I have been baking since I was 7yrs old, and no, I'm not from France -ha! from IL. Now living in San Diego, trying desperately to become a pastry chef; desperate because I seem to be trying to wing it on my own. So far the highlight of my career, if you will, is a sugar art class I took at the French Pastry School in Chicago, IL. with Stephane Glacier. The closest I have to a mentor is Ex. Chef Urs Emmenger from the La Jolla Marriott hotel. Of all the chef’s I have met, he has exceeded in kindness and encouraging furthering my own education in the culinary field. With a little help, I’ll call him with some good news some day.
