Confused new chef on the scene

hi all !
Im sean i own and run a restaurant in the uk called attitude. My food ideas are mostly centered around the science of food. I like to parr sweet ideas with savory , eg pan seared ostrich beetroot chocolate jelly and morrel foam.
just like to say a massive hello to all fellow food lovers ..... cook on !!!

Default Apple Caviar

Im looking for some help im currently playing with the idea Apple caviar but i just carnt seem to get it right...
Ive searched the net and tried loads of different recipies but none of them seem to work! Has any one out there had any experiance in making this and if so can you help..
