Default Aloha from Hawaii

Aloha Everybody,
I just signed up, so here is my background:
Born and raised in Switzerland a long time ago, I now own a small chocolate business in Honolulu. We do just about anything, as long as it's chocolate, but are primarily creating custom party favors.

I am a self taught "chocolatier", don't consider myself a pastry chef since I don't know all that much about baking. My shop is air conditioned 24/7 for the chocolate, so baking would kind of defeat the purpose.

Am looking forward to become a good and useful member of this community here, hoping I will learn a lot. And who knows, even with the little bit I know I might be able to help some members with chocolate related questions.

Favorite Motto: Of course I don't look busy, I did it right the first time!

Hobbies: Chocolate, chocolate, chocolate..... and motorcycle riding/beach!

We're glad to have you, Cocoman! You and Chrose (short for Chocolate Rose) will get along fine- as well as the great many others here who work with chocolate or long to.

You'll note that we have two pastry forums- one for professionals (like yourself) and one for everyone. We hope you'll be a frequent visitor to those forums and all the forums here at Chef Talk.

Welcome! Aloha,
Mezzaluna

Hey Chocoman...welcome aboard. Only thing I know about chocolate is I love it..especially with nuts and raisins. Now the wife find out you peddle that stuff she would elope with ya quickly..and the man eating Rotty which hangs in the back yard quickly become your pal for only a small sample. Guess that stuff is a popular item on the earthly palette
