Chef <--- New to the forums, not to the business.

Howdy cheftalkers.

I've been lurking your forums for some time now.

My name is Zak, I live about 1.3 hours away from Downtown Chicago, and I'm currently the marketing director / gofer / resident beer geek at my family's restaurant.

My grandfather started The Olympic Tavern in 1945. There's a nice little writeup in a local music/dining website here if you care to check it:

Anyways, I've been in the restaurant my entire life, I'm becoming more and more confident in the kitchen, and I'm not sure what's next. I may leave for a year or two and get some experience in Vegas. Or Mexico. Or Italy. Who knows.

Welcome to Chef Talk, Zak! Coming as you do from a restaurant family, I'm sure you'll find plenty to share with us, and find others to connect with.

Nice article about your place. I know enough about the Rockford area to agree wholeheartedly about the price points of your menu. As for the beer: Why not add a New Glarus brew to your menu? They have some great ones!

P.S.- I visited Rockford several times when I was in high school (well into the last century ) and have fond memories. I grew up downstream from you in Rock Island.

Sorry. New Glarus pulled Illinois distribution last year.

New brews to my (selfishly chosen) beer menu;
Pyramid Apricot Hefe
Breckenridge Vanilla Porter
Flying Dog IPA and Amber
3 Floyds Alpha King
Rogue Dead Guy Ale
