Default New to it all!

Hi everyone. I'm so excited to find this website. I've tried to use others recently but it seems no one has used them since 2004 or so. I just finished my first week of Culinary school....We aren't in the kitchen yet. Which is ok. I think I need to ease into it. I'm 22 years old and I do like to cook. I like what I cook..is it the best....? no. But I guess that is what school is for. I guess you could say I am a bit nervous. But excited. I have 12 months to learn everything I can. Then do a 3 month externship, who knows where. Well I guess i've typed enough here. I hope people acutally use this forum. I think I need some encouragement!

No Smile Homemade Mayonnaise, Anyone?

Hello! I am new. Found this site searching for the best recipe for making my own mayonnaise. I have tried with success but the flavor is not really that good. I first used EVOO and then tried Walnut oil. The consistency is fine and we ate them both but I really want to find a healthy oil that is not bitter. I love EVOO but why is thw mayo bitter tasting? Any help is appreciated.

I would suggest you post your mayonnaise question in the Food and Cooking Questions and Discussion forum, as that's the best forum for questions about cooking.

Having said that, I'll offer some insights about your mayo problem. I do not recommend using a flavored oil for your first effort at making this sauce, which mayonnaise actually is. Vegetable oil (soybean or canola) would be best for the mild flavor you're looking for. The grassiness/herbal/peppery character of EVOO could be the source of the bitterness you encountered.
