| Hi My name is Bridget White-Kumar. I'm an Anglo-Indian from Bangalore, India. I'm a self published author of 3 recipe books on Anglo-Indian Cuisine. Anglo-Indian Cuisine is a fusion of both western and Indian Cuisine where the normally bland western cuisine has been given a dash of exotic Indian Flavour. This cuisine evolved over many years as a result of reinventing and reinterpreting the old quintessentially western cuisine by assimilating and amalgamating ingredients and cooking techniques from all over the Indian sub-continent. Thus a completely new contemporary cuisine came into existence making it truly “Anglo” and “Indian” in nature, which was neither too bland nor too spicy, but with a distinctive flavour of its own. It became a direct reflection of the multi-cultural and hybrid heritage of the new colonial population. I would be very happy to answer any queries Bridget |

| I'm happy to extend a warm Chef Talk welcome to you, Bridget. Your focus is very interesting to me and to many others here too, I'm certain. Your approach sounds to me like a good way for those of us less familiar with the cuisine of the subcontinent to approach it and learn its flavors and techniques. We hope you'll explore the features of the site and enjoy browsing the forums. We have a good search tool to help you locate a topic you don't see in the current threads. We look forward to seeing you here often. Welcome! Regards, Mezzaluna
