| Hi Chefrt, Wecome to the forum, I'm always looking for inspirational ways to cook whole fish, and I would imagine the south china sea throws up many possibilities i've never heard of. Please excuse my ignorance, but is your cuisine mostly chinese or Malay and indonesian?

| In my kitchen we cooked all kind of cuisine, from Western, Malay, Chinese, Indian and Arabic. All of my team is a very good chef, I have all the specialty staff to do the job. |
