Hi Buzz, and welcome to Chef Talk. The Naples area is lovely (although the traffic is getting crazy!!). We'll look forward to hearing what you do with the local seafood. I have family there and visit from time to time, so I'd also be interested in your recommendations for seafood sources and good places to eat- especially the off-beat and truly local places.
Since you're also intereted in knives, you won't want to miss the Equipment forum! We've had knife conversations off and on for some time, so you may want to look at those and chime in. The search tool will help you find those earlier threads.
