N00b - just enrolled in Chef school :)

Hi folks

My name is Mike and I am 31 years old. I am self employed but I always have wanted to have culinary skills... not just the stuff you read about in magazines/books but real professional training. I just love food, I love cooking, I love the art portion of it, the combinations of foods and flavors.

I always said there is three major things I wanted to learn in my life, and one of them is to be a pro-level chef. So, I just signed up for culinary school. I am so excited, I can't WAIT to start. My goal is to graduate top of my class and I am hoping to pick up a job that maybe I could work a couple nights a week and weekends just for fun, and to learn and keep practicing my skills.

I can't say there is one aspect of cooking I love most... I love it all, but I suppose if I had to choose I would say pastries and desserts. At my school the students prepare food for the cafeteria and compete in some events, so I am hoping to do the whole lot and participate in as much as I can.

I CANT WAIT TO START!!!!!
