Default Hello to Chef Talk people

Hello,
I am new here and thought I should tell everyone a little about myself.

My name is Michael, I am 27, a graduate of NECI, and am a Pastry Chef at a nice restaurant on Newbury St. in Boston, MA. Although I am in Pastry, I really enjoy charcuterie, but have not done very much professionally. In the process of my job I was working alot ( big suprise huh) my overnight baker had quit. The Chef decided, we would not fill the job, overnight baking would just be added to my duties. After getting that squared away, my assistant moved across the country to be with her girlfriend. So to stop complaining I was very busy, and overworked, after 7 weeks I found and started training a new assistant, but during this period I damaged my wrists and have been out almost 4 months now. My wrists don't hurt everyday anymore but I am still unable to manipulate heavy things, and I have been told that I may need to seek a new profession. I am looking into going to Johnson and Wales for there Food Service Entrepreneurship program. I am thinking about starting a culinary store of some sort.

That was long and detailed, hopefully not too much detail, but there it is.

Hello I am from Poland and I have restaurant with various kind of spagetti. I am also a master of spagetti.
