There is a lot of Egyptien desserts Ruzz bi-l-shaharia (Rice with Vermicelli)
or the famost one is Umm Ali,or Mihallabiya-Milk pudding.
The most of ingredients used in the pastry kitchen in ME is mixed nuts almonds,hazelnuts,pecans and peanuts roasted and peeled.A mixture of two is generally used.The nuts are crushed very finely and mixed with sugar in a ratio 2/3 nuts to 1/3 sugar.Rosewater or vanilla essence are sometimes added.As well used
raisins,dry coconut,dried fruits.
