Default Hello to all from lovely Egypt

Dear
I'm a newcomer to this forum, and would give all brief introduction about myself.
Fulfilling the Chef duties in lovely Egypt exactly in the busy City Cairo not far from the Pyramids.
In the Middle East and Africa since more the 12 years.

My interest is for sure cooking, and creating exiting new dishes and flavors, and share Ideas of that wonderful profession.
But not only!! As well the Egyptian culture is one of my favorite.
Hope to find some friends with the same interest, to share with me.

There is a lot of Egyptien desserts Ruzz bi-l-shaharia (Rice with Vermicelli)
or the famost one is Umm Ali,or Mihallabiya-Milk pudding.
The most of ingredients used in the pastry kitchen in ME is mixed nuts almonds,hazelnuts,pecans and peanuts roasted and peeled.A mixture of two is generally used.The nuts are crushed very finely and mixed with sugar in a ratio 2/3 nuts to 1/3 sugar.Rosewater or vanilla essence are sometimes added.As well used
raisins,dry coconut,dried fruits.
Will be placing the recipes on the forum for everyone to try it.
Hope i could give a little hint or ideas about the oriental pastry (Halewany)
