Hello Rene; it's nice to meet you, too. What are some of the dishes you most enjoy preparing?

We hope you explore the site and enjoy the cooking articles, cookbook reviews, recipes, and the photo gallery too. There's a lot here, so we know you'll be hanging out here often.

Welcome!
Mezzaluna

Hi!!

Lately I've been playing around in the kitchen with Asian food, yesterday I put a spin on a chinese won ton, added a little kick to it and deep fried them , served it with a Thai sauce.... Yummy

I also love making soups, and breads, :-)

How about you, what is your forte'?

Rene, I've always focused on the savory side of the kitchen, like you: soups, stews, different ways to jazz up chicken breasts (what a challenge!). But lately I've been getting more into baking bread and pastry. I don't think I"d have had the courage to do that without all the support and knowledge of Chef Talk members. Now I know why my breads weren't rising fully, and why my pie crusts were awful!

I have trouble with my pizza dough :-( The only way I can get my pizza dough to not be soggy in the centre is to cook the dough first then add all the ingrediants

Do you make pizza dough? I even switched to my bbq (outdoor oven) to bake my pizza's as the temp gets hotter than my kitchen oven

I'm not sure what to tell you about the dough, but people will ask you if you're certain your oven temperature is accurate, what your recipe and method are for the dough, and what you are baking the pie on (stone, baking sheet, etc,).

You could try using the search feature here and type in "pizza dough". I'm certain it's been discussed, but I'm not certain if this problem has been addressed.

Good luck!
