Chef I am new here and ready to meet you all

Hello,
My name is Scotty. My screen name is CastIronCook. You can call me either. I was an Army cook for 22 years,(Amongst other things), and I love cooking. I love it so much that i dont find it to be work at all. I currently run a nightclub and resteraunt. It is a great place to work.

My cooking interests vary from time to time and lately i have been studying bread and bread making. I have made many yeast products and other baked goods in high volumes, but lately i am just doing it at home. My newest interest in Bread is in Sour Dough, and from what I am reading it takes 9 days to make. Any of you made this product?

What i would like to do is learn as much as I can from you experts. I have many questions in areas like Bread and hommade pasta, spices and olive oil, and coffee questions too.

I am glad to be here and thank you for having me.

CastIronCook, you can now upload photos to the photo gallery. I'm not sure if you can link them or need to upload from your computer; the information in the photo gallery will tell you. I'm quite ignorant about that function of Chef Talk!!
