| Go to the main Chef Talk Forums page, where all the forums are listed. They're grouped by audience (ChefTalk.com forums; Professional Food Service Forums; etc.). Among the Professional Food Service Forums is the Professional Chef's Forum. This is a catch-all forum for professionals to discuss various issues of the food service business with other professionals. (Home cooks like me are free to read, but we aren't supposed to post there.) Click on the forum that best suits your question; you'll be taken to a page with a list of conversations ("threads"). To start a new thread, click on the "New Thread" button, as you did to start this thread in the Welcome Forum. Name your thread and type in the message. When you're done, click the "Submit New Thread" button below the box where you typed the message. Let me, another moderator or members know if you need further assistance. Since this is a message board (meaning people come and go as they're available), you may have to wait a bit for a reply. But we'll answer your question. Good luck, Mezzaluna
