Hello,

I am Jim Henry. My wife Jan's name makes up the other part of our user name.

I "grew up" in the family restaurant business, doing everything from cleaning, food prep, cooking, ordering, etc. So, even though I'm not formally trained, I consider myself to be a "shade tree" chef. At 71, I still love to cook and do most of the cooking here at home. We're beginning the planning to remodel the kitchen, expanding it into a little-used formal living room (taking out a wall, etc.). I want the new kitchen to be supported by a 48" gas range, which means that I need to learn a lot about pro-style gas ranges and also how to ventillate them. This thing of return air is confusing to me, and I haven't been able to get any useful information about how it can be accomplished without opening your space to invasive air intake. Anyway, this gives a little information about me and what we are up to. Also, I hope it clarifies somewhat my claim to be a retired chef.
