| Hello there. My name is Rachael Eisner. Just graduated from the Kitchen Academy of Sacramento in November of last year. Starting my life as a baker, looking for work in the greater San Francisco bay area. Joined the forum to search for advice, and the great wisdom that I am sure you all possess! Have a good day. |

| Hi Rachael and welcome to Chef Talk! We have a good number of highly skilled and experienced bakers here (plus some very strong home bakers too!) and hope you get into the swing with the community quickly. Besides the discussion forums we have great articles, cookbook reviews, blogs, photo gallery.... lots of great information to peruse. We hope you are a frequent participant here. How did you get into baking? I've recently begun exploring as a home cook and have found it very enjoyable. | My Great Grandmother was a lunch lady, in the early 1920's and 30's? Back when they actually made the pie crust themselves, and roasted the chicken/turkey whatever they were making that day; on the school campus. She is kind of my hero so....followed suit? Also it helps being the oldest child in a single family home. Dad's house got boring (he liked frozen veggies) and mom's house got a little ridiculous. Frozen pizza's, lasagne and rice a roni made me want to learn really fast. Not that frozen pizza's aren't wonderful sometimes....just not all the time. So here I am! Someone who bakes for a living.....soon. |

| So, another one lured into the business by learning from an excellent home cook! Mine made bread and savory dishes, but my Mom loved to try dishes she saw in the New York Times Sunday magazine. She doesn't cook much any more but boy, when I need a hint, it's nice to have her at the other end of the line. Welcome! May you surpass even your grandmother's prowess! Mezz

| Congrats on your graduation. I hope you don't mind, but I wanted to pick your brain on the Kitchen Academy of Sacramento. I live in Elk Grove which makes it convient to attend. I've taken a tour of the place and was impressed with the facilities. Everyone was friendly and happy to answer my questions. My concern, being that this would be a career change for me, is it a high quality school? Do you feel you've received a quality education? Basically, what was your experience like? I hope I'm not being too nosey - like I've mentioned earlier, the people there were genuinely cordial, but I know they also need to promote the school. I just want to get to know the school from a students perspective. Your insight would be greatly appreciated and valued. Again, congrats on your graduation.
