I 've found that the term sulfrino is a corruption of the "Township Solferino" in the region of Lombardia, No. Italy. France and Austria faught the Battle of Solferino there in 1859. "Coming from the Castle of St.Peter Tedoldous(?)". The potage is of tomato and potato commemorating the colors of The Red Cross. The vegetables of the same name are also served with other dishes, being parisienne balls of potato, carrot and others reminding us of the cannon balls fired!Can anyone verify my findings, as I am a Student Chef. |
