What do you like on your fish and chips? ...Mine's salt and vinegar 'cept if i'm eating posh, then i like a bit of tartare sauce

Fish and chips is a favorite Friday dish where I live in Wisconsin (USA). Immigrants to this area observed this tradition at home and the restaurants have enthusiastically adopted it. While chips (fries) are a frequent accompaniment here, potato pancakes are another popular option. Fish choices here include cod, walleyed pike (a very popular lake fish), perch (lake and ocean) and some other species. Dietary preferences have put baked fish on the menu for those who prefer not to eat fried fish. I have friends who wouldn't miss going out for fish fry at their favorite place, or trying a variety of restaurants in search of the perfect plate.

What's your favorite plate of fish and chips?
