Although never formally trained, I've been lucky enough to have worked under some influencial chefs in my 14 years in the industry. Some of whom took the time to help me better my career and I am grateful to them.
But if I'm not trimming a pismo down to filets, or rolling gnocci like a fine Cuban cigar, you will usually find me at the local horse track betting the longshot in an exacta box.

the name is actually derived from an old cartoon "Lancelot Link the Secret Chimp", and the 7 represents dissonance in a musical chord. But if I ever come across a horse with a simular name you can bet I'd wheel in a trifecta!!!

sorry about the lapse in conversation, I geuss we're all a bit busy this time of the month. Inventory is done, now its just time to hope & pray the bookeeper (i call er helen) doesn't make a typo.
Anyways, Greg, I'm leaving my current post As Chef De Cuisine, to be the Sous at a new hotel/restaurant opening in St. Paul.
If your at the Casino you may know a few freinds of mine.
