Stay in school and graduate with the highest grades you can. It will pay off in the long run. There's plenty of time to learn what you need to know.
Also, you should recognize that running a restaurant isn't just about cooking. It's a business. In order for a business to stay in business, it has to make a PROFIT. There are lot of other skills involved in running a business besides the manufacturing (cooking)...purchasing, personnel, inventory, merchadising, marketing accounting, general management, etc. etc.
Go get a bachelor's degree in business and work your way through school by being a cook somewhere. Then go to a good culinary school.
The best combo is to have experience combined with formal education. There are just some things that are better to learn in a formal educational setting. It is a faster, easier way to learn from others mistakes rather than having to learn them the hard (and expensive) way.
