Another Newbie

Hello to all! What a great site to stumble upon. I have 18 years in the biz. Everything from FOH to BOH. I owned a restaurant at one time too. Now, after much soul searching, I have come to realize that cooking is my true love. I am a new student at the CCA in San Francisco. Any other CCA students or alumni out there? I look forward to participating in this site...thanks for the great site Nico.

Thanks Chef David. What happened in 1995? I hear many grumbles since I have begun about the school not being the way it used to be. Actually, I have heard the same thing said about the CIA. It does seem to me that the school is about enrolling as many students as possible for a tuition of 32k, soon to go up to 37k. There are 64 students enrolled in the January class split between 2 chef instuctors. I think the ratio is terrible! However, I intend to make the best of it, and recieve the best education I can.
