I'm presently working in salads and Garde Manger at the Clevelands house resort.
I've come up with an intermittent problem when it comes to making macaroni salad.
Sometimes the mayo seperates after an hour or two in the fridge before serving.
the Recipe is: cooked and cooled macoroni, mayo (hellmans), diced red peppers, salt, pepper,celery salt, and some honey dejon.
Very simple recipe, but sometimes the mayo breaks down other times it doesn't.
Any suggestions?
