There is no real substitute for Steen's. Shroomgirl is close to correct but sorghum is not the same at all. Different plant.
My Parrain (godfather) was president of the St. James Parish (Louisiana) Sugar co-op for years and we got the real thing -- unrefined, pure cooked sugar syrup. Just like Steen's but from the source.
To be honest, I can't bear the smell of Steen's. My husband however can use it on pancakes. Go figure.
When I don't have it in my pantry, I use a mix (half and half) of dark corn syrup and molasses. It is thinner and doesn't get quite as solid as Steen's but it's close in flavor.
