 New Tricks....Old Dog Brand New That's me...brand new to this site and still trying to figure out the layout. I am currently an Executive Chef of Menu Design for a large catering company. I have been certified with the ACF for over 10 years and have finally found an area of this feild that allows the Chef to have a real life outside of the kitchen. The reason I found this place is that I have been asked for a preparation method for the first time in my career that I have been unable to find and was hoping to get a little insight from some of your South American Chefs who may be more familiar with it. If someone could direct me to the best place to go to share advice and gain expert knowldge...it would be appreciated. Thank You |
