We're having lemon baked chicken, steamed broccoli and baked potatoes (Russet for my husband, sweet for me). And a nice 2001 vintage of A&W Root Beer.....

Chili John's chili! Chili John's being a Green Bay restaurant that also packages their chili for sale in grocery stores (snakelady knows what I'm talking about!).

Tonight it's stir-fry at our house. I'm using the Emeril Lagasse recipe posted on cheftalk a while back by Afra I think.

Chicken burgers are on the menu tonight!

with homemade fries. A salad to balance...and Carribean beer!



Oh yes, recipe, humm

(Serves 4)

1 pound ground Chicken
1/4 cup Jerk Seasoning (recipe follows)
Vegetable oil, for pan
4 slices Muenster cheese (optional)
4 hamburger buns, lightly toasted
Sliced tomato (optional)
Sliced mango (optional)
Sliced white onion (optional)

1. Place Chicken and jerk seasoning In a medium bowl, and stir to combine. Form into four patties.

2. Heat a grill pan or a grill to medium high. Lightly brush with oil. Grill until cooked through, about 8 minutes per side on grill pan or 7 minutes per side on grill. If desired, place one slice of cheese on each burger for the last minute of cooking. Serve on toasted buns with sliced tomato, mango, and onion.

Jerk Seasoning
Makes 1 cup or (½ cup)

When handling the Scotch bonnet pepper, protect your skin with latex or rubber gloves.

(1) 2 bunches scallions, white and green parts, trimmed and finely chopped
(2) 4 teaspoons ground allspice
(½) 1 tablespoon freshly ground black pepper
(¾) 1 1/2 teaspoons coarse salt
(1) 2 large cloves garlic, finely chopped
(½) 1 Scotch bonnet pepper, seeded and finely chopped
(½) 1 teaspoon thyme leaves

In a medium bowl, add all ingredients, and mix to combine. The seasoning can be refrigerated in an airtight container for up to 2 weeks.

Note: Ground turkey can be substituted for ground chicken.

Turkey kabobs (breast tenders, tendons removed, chunked and marinated in olive oil, lemon, garlic, oregano), grilled mushrooms, polenta (probably).

Mmm.. carribean beer...

Tonight will be Potage Parmentier, Garden salad and a warm pita sandwich with chinese eggplant sautéed with sun-dried tomatoes, garlic, soy and balsamic. Fruit salad with a light honey and vanilla-bean syrup for dessert.

This evening I did roast turkey breast marinated in a mango sauce, garlic mashed potatoes with parsley and cream, and whole green beans with carrot coins. Of course I personally ate a teaspoon of peanut butter. It's almost the only thing that doesn't upset my stomach as of late. Everyone else scarfed it up though

You mean Emeril's fried rice, Sandy? How did you like it? Well, folks, sorry I didn't tell you sooner what I had that night at my friend's house; I was so busy that I totally forgot! Well, anyway, we had green beans, grilled steak (which my friend grilled in her backyard), potaotes, orange juice for drink, and some delicious rice that she made; I don't know how she made it taste so good. All in all, it was a very excellent meal.
