Post greetings from a wannabe chef

Hello and greetings from sunny Florida. As you might guess from my name I really like to cook. I enjoy being in the kitchen when I get the chance. I work as a Systems Analyst and have my office at home so I get to practise cooking a lot. Since I don't have cook for a living I can truly enjoy cooking.

I am on a quest for an old recipe or idea. My departed grandmother made a dressing for coleslaw and potato salad that:
1. Was cooked on the stove.
2. Contained prepared mustard.
3. Had minimum amount of ingredients.
4. Was yellow in color and quite tangy.

that is all I know. does anyone have something like this. It would be old - at least 70 to 80 years. Since granny died at 74 some 20 years ago. Thanks for the help.

Cooks For Fun-

My Great Grandmother had an awesome cooked potato salad dressing.

The recipe follows:

Melt 1/2 cup butter over medium heat. Add 1 Tbsp. flour, 1 tsp. salt, pepper. Add 1/2 cup sugar and 1 Tbsp. mustard. Stir well. Add 2 well beaten eggs, stirring rapidly. Slowly add 1 cup milk while stirring to prevent lumps. Whisk in 1/2 cup apple cider vinegar. Stir until thickened. Cool. Add cooked cubed potatoes (Red Bliss or new potatoes are best. Add parsley and chopped scallions. Chill.

This is about as close as I have come to the origional. Thank you so much. Now another question, what would happen if I left out the flour? What purpose does it have in the recipe? Is it just a thickener and could I use something with less of an aftertaste?
