Default a little about me

I’m not a chef but my husband says I cook like one. I don’t think he’s complimenting my cooking skills as much as commenting on the mess I make. He says he’s never seen anyone use so many pots. I say he’s lead a sheltered life.

In my past life, I worked as a F&B Mgr in 5 star establishments where I learned a few neat tricks thanks to some wonderful chefs. I’ll bet that’s where the “too many pots to clean” comes from too.

Originally from Canada, I now share my time between Oregon USA and Mexico.

After 2 days of reading posts here, I’ve been entertained by many characters. I love characters so I’m looking forward to getting to know you all better

Thank you for introducting yourself, wildaboutethnic. I had to laugh over your pots and pans story! When I got married, I offered to cook anything my husband wanted- so long as he cleaned up. That went nowhere, fast! So at least I get him to do half of the clean up and dishes, which was really all I expected.

You mentioned that you cook ethnic foods. Which ethnic groups' and cultures' cuisines do you like most? Are there dishes or ingredients you especially like, or that you would like to learn more about? Since we have members here from all over the world, I'd say you have a good chance of fulfilling those wishes.

I hope you explore the site thoroughly, contribute to the discussions, and become an avid member of this community. Maybe a future member will consider you one of the interesting characters here!

Hi Mezzaluna and thanks for the warm welcome.
I enjoy all varieties of ethnic cuisine. I am still looking for something I don't like!
I lived for a few years in Vancouver Canada where just about any nationality under the sun can be found in the restaurant sector. The food was wonderful!!!! I am not a food snob. I qualify more as a Gourmand than a Gourmet and I guess if I had to choose a favorite it wouldn't be an ethnic food but rather a wild lifefeast. Years ago, I hosted an annual function for a Hunter's Association and it consisted of a buffet of wildlife delicacies. What fun!!!
But seeing as I would quickly become a vegetarian if I actually had to face the fact that chicken pieces are not really created on some assembly line at Safeway's warehouse, I try to satisfy my curious tastebuds with different ethnic dishes.
I hope this answers your questions and lays to rest any rumors about me qualifying as a character. LOL.

Surely you jest. Your profile shows you are Scotland.
I love the food in Scotland!!!
One of the most memorable meals I have ever had was deep fried haggis in a little chip shop in Berwick-upon-Tweed.
I'm also happy to see that waves are being made so that that lovely little community can be returned to it's rightful owners.
You asked if my interests include Mexican cuisine.
I do enjoy Mexican cuisine though my tastebuds seeks out the slightly more unusual tastes of the Aztec and Mayan based dishes. I am fortunate in that I have the opportunity to enjoy Yucatecan dishes from time to time. I haven't tried to cook it myself but I'm sure I'll give it a go someday.
So nice to meet you and thanks for the welcome Jimmy. LOL.

What I actually meant, was that I am ignorant of mexican cuisine. Bar the odd place that serves Fajitas, Dundee has a total absence of anything more interesting in that line.

Hopefully you will share some of your Mayan and Aztec experiences with us. I really look forward to hearing about them, having absolutely no idea what to expect.

Scottish food plays a huge part in my business. Mainly for functions where the host is entertaining overseas clients/guests. The only haggis we provide is by coating hard-boiled quails eggs with it, then bread crumbs and deep fried. served cold as an alternative to scotch eggs.
We call them very Scots eggs.

Sounds like you have a varied and imaginative idea of the food you like. ..You'll like it here

Hey Jimmy,
There is a website that can help you along if you want to have a look at some Mayan cuisine. I haven't tried making them but based on what I've tasted they look pretty authentic. The Sopa de Lima is delicious and I've yet to find anyone who doesn't like it.
The Sikil Pac sounds about right also though it's usually made with pumpkin seeds and jalapenos peppers instead of the habenaro. It's overall effect is almost like a paté. It's really quite lovely.
Anyhow, being a newbie means that I haven't earned my stripes and can't post links so the best I can do is tell you to do a web search for the words Yucatan Adventure Recipes.
