Default New guy form New Orleans

This is my first day on this website but it is pretty fun ttalking to so many people in the food industry. I have worked in kitchens since I was in college when I needed a full time job. I got one washing dishes and quickly realized that I wanted to work my way up to the line. After working in a little "mom and pops" type steak and burger joint for a year I decided that cooking was my greatest passion. I never went to culinary school but I learned a lot by reading and asking a lot of questions. The last place I worked was Bourbon House in New Orleans. I was a sous chef there for a few years. Including the year before Katrina and a couple right after, that was a pretty interesting experience. I have since gone a different path but plan to open a restaurant with some family members in the next two years. I keep my skills sharp by doing way more cooking in my home kitchen than your average household. I blog about some of these recipes and any other food related adventures I fell are good reading. I hope to make some good connections and friends by being a part of this community.

Welcome! I'm new here too (joined yesterday...LOL) and I love t his site! It's great to connect with people who share my passion for food.

Like you I have no formal training .. just lots of years of cooking at home and experimenting. I am a professional now.. I'm a line cook at a breakfast place and I have also been THE cook at a cafe and there was where I really spread my wings so to speak.

My ultimate goal is my own personal chef business but I know that is years away (kids still need me) so I am working in the industry and loving every minute of it.

Hi Eric, You live in my most favourite place in the world. Only been there twice, but once was enough. Last was 2 weeks before Katrina. Love the food hope you'll be sharing some recipes.
