Default Hey all

I ran across this web site while shopping for "Monkey Dishes"...go figure. I am not a graduated Chef, but have owned my own business for a few years. Trial by Fire (literally) as they say. My menu is pretty standard, but I occasionally branch out with some fancy do-dads. I do have a question about Baked Poatoes tho. We're fixin' to do an "All You Can Eat" Steak night and of course, baked potatoes are on the menu as an option. My question is this: What's the average hold time for them, I do not want to serve "hard" potatoes. My prep is egg white wash, Kosher salt and baked in a conventional oven. I will only need to serve them for a three hour period, will they hold for that long? Any tricks of the trade ya'll care to share? I know this is a simple food, but those are the ones that will bite you in the butt.

I believe there was a similar question about holding potatoes in the Food and Cooking Questions Discussion forum. Try using the search tool here to locate that thread. You're welcome to post in any of the general forums, and to read in the Professionals' forums. However, for home cooks like you and me, we must consider the Professinals' forums as "read only".

Besides the forums, don't miss the blogs, photo galleries, special guest archives and cooking articles. I'm sure there's more, but that's just for starters.
