Clown Hello from Mexico City

Hello everybody, I have been a frequent visitor, and it is an honor for me now to be a part of this Great Forum, I hope to learn a lot from everybody, and if I can be of any help or any use, please feel free to contact me, and I will do my best effort.

A little about myself, I was born in Mexico City, lived in Houston since I was 2, came back to study from elementary to College, but have always been traveling to the U.S, specially Florida, Texas (where we have a house in a town called New Braunfels), and Seattle (great seafood)

I am a Biologist, Representative in Mexico of the International Game Fish Association, with HQ in Dania Beach, Fla. I am also the Executive Vocal of the Mexican Sport Fishing Federation, and Secretary of the Veracruz Sport Fishing Association, I have fished since I was 4 years old, I actually own a tackle shop in the city of Veracruz, in the Gulf of Mexico, and I have a business in Mexico City called "Pescados y Mariscos GOURMET", which could be translated to something like "GOURMET Seafoods", which sells vaccum packed seafood, I love to eat good food, so I love cooking, I guess that is why I had a Gastric Bypass last year, I already have lost 130 lb, and am at about 45 pounds away from my ideal weight, so don't eat too much, LOL.

I love to cook seafood, pasta, meat, vegetables, sushi, you name it!, so I hope to learn many things from all of you.

Welcome to Chef Talk, Snookmachine. I'm sure we'll benefit from your expertise and knowledge of fish and fishing. We have chefs and avid home cooks here from all over the world, so there's opportunity to learn from people on just about every continent. (We did have a member from Antarctica, but I haven't heard from there lately!) That's a whole lot of fish talk to enjoy!

Hi MEX,

Do you just fish for sport, or do you have a favourite fish you like to catch for dinner?

Locally we just go for a trout now and again. Our youngest caught a huge one this summer and we "enjoyed" the steaks done Caribbean style. They call it escovich which is very close to our escabeche apparently. Not my best success but I'm into Caribbean right now. Junior and the rest of the family were hoping for sweet and spicy and they got pickled...live and learn eh?

Great weight loss. Radical method though. Cant have been easy. Well done.

hi there, thanks for the comments, I started fishing for largemouth Bass when my grandfather bought a house in front of a river, in New Braunfels, Texas, a small german town located between San Antonio and Austin, and I fish everywhere, although my favourite species to fish and to eat is Snook, simply delicious, I like Ceviche very much, and another great species for me is Cobia, which is not as easy to catch, but great to eat, and one of my favourites is Amberjack, greater or almaco, two of the best fishes to eat.
