Default Newbie from NOLA

Hello everyone! I am a chef de partie in New Orleans and have been in the industry (fine dining) about 6 years. Super stoked to talk shop with all you guys.

Whilst we have many fine chefs and other culinary industry professionals on here, some of us (like me) are just enthusiastic amateurs - so you will get all shades of opinions, which makes for interesting reading!
