Default Hello Everyone.

Hello, again, everyone.

My name is Dave, I'm a 24 year old pizzaiolo from Wilmington, NC. Just stumbled across this forum a few days ago and seems to be a repository of great information, advice, ideas, etc...

I've been working in the restaurant industry for about 7 years now, up from dish-washing, grill cooking, a little saute and the majority of my time has been spent making pizza. I was recently hired as the head pizzaiolo at Siena Trattoria here in Wilmington...which, so far, is my favorite position yet. I've been given the opportunity to flex my creative muscle, work on the menu, run specials, and work closely with the owners and executive chef in the direction of the restaurant. And the chef is teaching me...a lot. I'm more hungry to learn now than I ever have been.

I have never been formally trained. I went to film school, and while I don't regret a minute of my college education, I'm beginning to think it was a bit of a bust. Should have gone to culinary school...but I suppose it is never really too late.

Anyway, there's a bit about myself...looking forward to speaking with/meeting the all of you.

Hello and welcome to Cheftalk!

Lots of professionals on this site, so you will find lots of articles with interesting content - some of the photographs aren't too shabby, either.

There is a professional area on the site where you can talk with other culinary industry professionals. Some like me are enthusiastic amateurs, but the main thing is: we all love food!
