Thumbs up Newbie in the house

Hi all,

I'm really excited to have found this board. I think I gained five pounds just reading the desserts forum.

I have food allergies and will be happy to swap info about cooking and baking with substitutes, e.g. soy products.

Disclaimer: I'm not a professional cook, nor have I ever been one. Heck, I've never even waited tables or washed dishes! But I sure do like good food!

Hi FunnyTummy! (Actually, I mis-typed your name as FunnyYummy at first. )

A lot of us are not pros, although we appreciate them sharing their skills and knowledge here. It's amazing how much better my cooking is since joining Chef Talk!

I will be happy to read your posts about soy products and other tricks to get around food allergies and avoidances. We have a great nutrition forum and have had some discussions about alternative ingredients.

Thanks Mezzaluna and Jim for the warm welcome!

Mezzaluna, I meant to get over to the nutrition forum earlier but was waylaid by the breads and desserts forums. I'm a carbo fanatic *and* I have a sweet tooth. Thought I'd about die reading some of the posts there. :drool:

Unfortunately there are some things that I haven't found a decent substitute for...like whipped cream. I've tried all kinds of things to get soy milk to whip (added powdered calcium, powdered egg whites, raw, fresh egg whites) but nothing seems to work. I really hope someone here has figured out the trick to it!

I'm also interested in raw food recipes and hope to run into some folks with experience in that area.

I think I'm going to like it here a lot!

Default Whipped Cream substitute

In truth, NOTHING can substitute for real whipped cream. But this is a recipe I used years ago, that might still work:

1/2 Cup Ice Water
1/2 Cup dried milk crystals
2 T Lemon Juice
1/4 Cup Sugar

Chill bowl and beater. Whip water and milk powder until soft peaks form (3 - 4 minutes). Add lemon juice; beat until stiff (3 - 4 minutes). Fold in sugar, serve at once.

As Dear Abby has already said, here or somewhere else, MODERATION is the key.

Try putting it in "Cook's Corner" -- that's where the thread on "What are the 3 strangest things you've ever eaten?" can be found. And other similar "challenges" to reveal the worst about ourselves. Amazing how alike we actually are here, even if sometimes divided into very distinct camps (the sea-urchin lovers vs. the sea-urchin haters, for example).

Anyway, if that is not the right board, Nicko will move it where he thinks it belongs, and cross-reference so it will still be found. (Not that I want to make work for him; he does an incredible job already.)
