For the most part I'm a self taught baker/decorator but have taken some courses(wilton "professional" courses in Chicago and last year, a wedding cake course at the CIA) Wilton=waste$(pulled sugar was ok), CIA was definitely money well spent. I make regular and vegan cakes. I'm in the process of opening a cake shop on Long Island, NY and hope to open my doors in about a month. I'm also considering distributing some of my vegan products but hey, one thing at a time! Thanks for the welcome.
