Cool Hello!

Hello Everyone!

I must say that I was reading many, many strings yesterday and I am impressed. I love this site, and the majority of the users are incredibly friendly, well-spoken and helpful! It is a pleasure to be here.

I am a 35yr old from northeastern Iowa (my own little slice of ****). I am a transplant, as my wife is originally from here. I am from Chicago, and have also lived in Minneapolis/ St Paul, both of which I love. I miss the big city and long to return! My wife agrees, but for the time being we are living in this area to be closer to her 2 children, 1 of which is still in school. Once she graduates, we are free to move and resume "normal-life" once again!

Anyway, just wanted to say hello, don't wanna go on and on too much. I'll save that for other forums.

Hi Wade, and welcome to Chef Talk Cafe. I'm sure you'll find the professional forums interesting, especially the Culinary Students' forum. And don't miss the excellent articles in the Chef Talk side of this site!

Do you have a school in mind? Do you tend more towards pastry or savory cooking?

When you say "northeastern Iowa", I immediately think of Dubuque. My brother-in-law works in Dyersville. Anywhere near your neck of the woods?

Hi Mezzaluna,

Thanks for the nice welcome. I have really enjoyed this site so far. I have found answers to a lot of questions I have.

I do have a school in mind actually. I plan to attend one of the Le Cordon Bleu schools, probably Western Culinary Institute in Portland, OR. We used to live in Minneapolis/ St Paul and before we moved here I toured the LCB at Brown Institute. I was impressed. It was brand new. I got to meet a couple of the instructors and see classes in session. (I posted a long message/ rant in Culinary School as to why I am here and not in school yet).

Anyway, we plan to move to the Pacific Northwest when our youngest graduates from HS, so that is where I plan to go. I love to cook anything, but prefer savory cooking.

I am not too far from Dubuque, about 90 miles give or take a little. We live in Cedar Falls, IA,,,right next to Waterloo (ugh, I hate Waterloo.) CF has UNI (University of Northern Iowa) so we have a better Arts program than most small towns, excellent theatre and we are starting to get more restaurants, even independent non-chains! Nothing compared to Chicago though. I miss the restaurants desperately!

Anyway, thanks for the welcome. I hope I will have something worthwhile to add from time to time.

It sounds like you have your path marked out, Wade. I hope it pans out as you see it.

I know the area where you live, slightly. I grew up in the Quad Cities and still have family there. Reading the The Des Moines Register on Sunday mornings was a family ritual. (Our other paper was the Chicago Sun-Times.)

I've heard good things about UNI. Good luck to both of you in your quests!
