My traditional Christmas Gumbo - Chicken, Andoullie and Oyster - After taking Chef Folse's class, now I know why this gumbo has so much more intense flavor than any other I make.  The use of three stocks is the key to depth of flavor.  I learned so much in his class

Thanksgiving desserts...Pate a Choux with Pumpkin Mousse and semi sweet Chocolate, Palmiers with fall spices (should have baked my puffs longer but I'm still working with only one oven in my kitchen =( by next year I'll have the new 48" DCS installed!!)
