What you need for making bacon. digital scale, kosher salt, pink salt, brown sugar, spices

This is my curing mix which is 1# kosher salt, 8 ounces sugar and 2 ounces pink salt.

Once the cure is rubbed all over the bacon they go into 2 gallon zip lock bags for 5-7 days. I place them in a half sheet pan to catch any spills.

What can I say ? Perfection, great cut. Next batch....I am going to have to send you some Canadian Maple Syrup...maple bacon. You should be proud Nicko !

That looks awsome, I bet it smells wonderful. I've smoked just about everything but bacon, some of my smoking was vegan but not so much anymore.

Thanks all you should smell it as it comes out of the smoker. Hard to believe something can smell that good.
