Food Portfolio

A selection of photos from dishes I have made over the last few years.

I used vanilla pudding mix, raspberries, and cabernet sauvignon for the body of the dessert, and a white-chocolate liquor flavored whipped cream.

"Sil" is the word in Swedish for herring. It is traditionally served in the manner depicted in this photo, either smoked or pickled. I was unable to find herring, so I substituted smoked salmon (another Swedish favorite, as well as mine). I used boiled potatoes, smoked Alaskan salmon, and whole-grain flatbread. The yellowish sauce is a dijon mustard sauce with dill, and the white sauce is a creamy horseradish sauce.

This is one of my favorite ways to cook chicken. It is cooked with dill, parsley, and lemon juice.

Another of my favorite ways to cook chicken. Nothing fancy with this one, just a basic balsamic vinegar, chicken stock, and spices marinade.

Chicken Parmesan, flour coated, dipped in beaten egg, rolled in Italian seasoned breadcrumbs, and then sauted in butter. Finished in the oven, broiled to melt parmesan cheese. Topped with my mother's tomato sauce.
