Not really a plate presentation but it's the closest category available. I've been playing with pickled peaches lately and decided to go a step further with it. I took some of my pickled peaches, their liquid, fresh peaches, peach nectar and water, pureed it, heated it, sieved it, balanced it with honey and salt (keeping it to the savory side) and gave it a round of syneresis filtering. It tastes like a spiced peach vinaigrette (minus the oil) which is what I hoped would happen. I have a few ideas in mind for it in the near future.
