This is me in the first bake shop that I had total responsibility for. The same bakery that many of my baker friends had as their first chief baker designation in. With 2 bakers on rotating watch under me, we prepared all deserts to be served in a dining facility that fed over 1000 per meal. We also prepared quick breads, french bread, pizza crusts and any other baked product that would be called for in one of the days other menu items. It was this bake shop in Okinawa Japan that many of us were first given the responsibility of day to day bake shop operations rather than just being a baker on watch in the larger dining facility back in the USA.
