Our First Day of the Diploma course we were hit with a Black Box Test. Our Ingredients: Trout, Corn Flakes, Mango, Smoked Rice, and Celery Root.
The dish I presented: Corn Flake coated Trout, over Smoked Rice Pilaf, Mashed Celery Root, Mango Salsa and Caramelized Carrots. Excellent start of the year!
